12 whole wheat or white lasagna noodles, divided

1 loving cup part-skim ricotta cheese

1 loving cup low-fat cottage cheese

1/2 loving cup fresh parsley, finely chopped

2 cloves garlic, minced

1/4 teaspoon nutmeg

Pepper to taste

4 cups Marinara Sauce, divided

1/2 pound part-skim mozzarella cheese, grated, divided

2 tablespoons Parmesan cheese freshly grated


Preheat oven to 375 degrees.  Cook lasagna noodles al dente using packet directions; drain.  In a pocket-size bowl combine ricotta cheese, cottage cheese, parsley, garlic, nutmeg too pepper; mix well.  In a 9×13-inch baking dish spread 1 loving cup Marinara Sauce.  Arrange iv noodles over sauce.  Spoon one-half the cottage cheese mixture over noodles inwards pocket-size mounds 2 inches apart.  Spoon 1 loving cup sauce over cottage cheese mixture.  Sprinkle amongst one-half the mozzarella cheese.  Repeat layers amongst iv noodles, the remaining cottage cheese mixture, 1 loving cup sauce too the remaining mozzarella cheese.  Layer the remaining iv noodles too 1 loving cup sauce on top.  Sprinkle amongst Parmesan cheese.  Cover.  Bake for 35 minutes.  Uncover.  Bake for 10 minutes longer.  Let represent v to 10 minutes before serving.  Makes 8 servings.
